I make sugar berries - A note for me



Roll purple gum paste, onto the hook of florist wire. 
Use sugar glue to "glue" it. 
Or put the hook on candle flame just for a second, 
then insert the gum paste ball, secure the bottom to "glue" it.
This is great tip I got from Cupid's Cake Decorating Supplies shop.
Love it!  Thanks Cupid's!


Use modelling tool as on the photo, insert on top of the gum paste purple ball, reshape if necessary. Leaf to dry.



Other Berries:
Shape gum paste into a cone shape. 
Make a hook on florist wire.


Make tiny gum paste balls, I used tiny pearl mold for this. 
Once pearl released from the mold, cut and roll them one by one.


Attached tiny gum paste balls on the cone with sugar glue.

Wedding cake with Colorful Sugar Flowers




Single tier cake, covered only with chocolate ganache,
because the Bride doesn't like the taste of fondant at all.

Smooth texture of white chocolate ganache.
Decorated with colorful sugar flowers
as per Bride's requested :)

I hope she likes her wedding cake :)

So here are the photos of the sugar flowers:
 Blue: fantasy sugar flowers.
I used rose petal cutters for it.
Purple: berries.
 Pink and yellow are buds.
Red are fillers.
Yellow: rose with large rose leaf.
White: large Southern Magnolia sugar flower
with buds and leaves.
Light green: buds.
Little white flowers: fillers.

How to make Giant Gold Fantasy Peony - A Note for me





I used Cupid's Cake Decorations Modeling Paste for this. 
It can be rolled out very thin, dried very quick and very light in weight. 
Although it measured 24 cm / 9.5" from one end to the other, this flower was not heavy at all. 
They dried crispy thin, I broke 1 petal, lucky I made enough.
I also used "Cake Art" brand of Gold Lustre Dust and green florist wire from the same shop.

I must say this modelling paste is very similar with
Squire's Kitchen Petal Paste which can be rolled into a very thin petals,
and they dried quick too.

The downfall: must be very careful when handling them,
they are crispy thin, break easily.

I have no complaint though, still happy with it.

It took me 2 full days to make this flower, to be more precise from 9am to 8pm. 

The result is a Giant Blossom Peony
measuring about 24 cms / 9.5"
from one end to another,
which is larger than the middle tier of the cake.

"Naked" Wedding Cake

THE CAKE

3 Large Tier Wedding Cake.

Top tier: Chocolate Mud cake with
Crushed Oreo Biscuits and Chocolate Ganache.

Middle tier: Spiced Banana Cake with Banana and Vanilla Bean Buttercream.
Made of REAL BANANA/FRUITS, no artificial flavoring
nor essences.

Bottom tier: Vanilla Bean cake with Strawberry Buttercream.
Made of REAL STRAWBERRIES, no artificial flavoring
nor essences.

Decorated with few white sugar roses
and lots of fresh strawberries.

A Reminder for myself on Gum Paste Silhouette



For Silhouette, I used gum paste.

I bought pre-colored black fondant then mixed it with Tylose powder,
knead it well, make a disc shape, cover with Crisco/Vegetable shortening,
then cover it again with cling wrap/saran wrap.


"Stick" gum paste on the baking paper.
Then ...


Place the silhouette on rolled out black gum paste.
Trace it with exacto knife.



This is the final result.

Top tier:
Red Velvet cake with Cream Cheese and White Chocolate Ganache, covered with White Chocolate Ganache.

Middle tier:
Vanilla Bean cake with Salted Caramel and White Chocolate Ganache, covered with White Chocolate Ganache.

Bottom tier:
Chocolate Mud with crushed mint cookies cake with Chocolate Ganache.

All cakes were covered with white fondant.

Decorated with piped royal icing, stenciled chandelier and hand cut bride and groom silhouette.
